APPETIZERS:
Cannabis-Infused Bruschetta
Ingredients:
4-6 slices of baguette
2-3 heirloom tomatoes, diced
Fresh basil leaves, chopped
1-2 cloves of garlic, minced
2 tablespoons cannabis-infused olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
Place baguette slices on a baking sheet and toast until slightly crispy.
Mix diced tomatoes, chopped basil, minced garlic, and cannabis-infused olive oil.
Season with salt and pepper to taste.
Transfer the tomato mixture onto the slices of toasted baguette.
Drizzle a bit more cannabis-infused olive oil over the top.
Serve as a delightful appetizer.
Spiced Marijuana Hummus
Ingredients:
1 15-oz can of rinsed and drained chickpeas1/4 cup tahini
2-3 tablespoons lemon juice
2 tablespoons cannabis-infused olive oil
1-2 cloves of garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
Water (as needed)
Instructions:
Combine chickpeas, tahini, lemon juice, cannabis-infused olive oil, minced garlic, cumin, paprika, salt, and pepper in food processor.
Blend until smooth, adding a small amount of water to reach the right consistency if necessary.
Taste and adjust seasonings as necessary.
Serve the hummus in a bowl, drizzled with extra cannabis-infused olive oil and a sprinkle of paprika.
Enjoy with pita chips or fresh veggies.
MAIN DISHES
CBD Coconut Curry
Ingredients:
1 cup tofu, cubed
1 cup mixed seasonal vegetables (e.g., bell peppers, broccoli, carrots), chopped
1 can (14 oz) coconut milk
2 tablespoons CBD-infused coconut oil
2 teaspoons curry powder
Salt and pepper to taste
Fresh cilantro, for garnish
Cooked rice, for serving
Instructions:
In a skillet, heat CBD-infused coconut oil over medium heat.
Add cubed tofu and sauté until slightly golden.
Add the mixed vegetables and cook until tender.
Next, add the curry powder and salt & pepper to taste.
Pour in the coconut milk, bring to a simmer, and let it cook for a few minutes.
Serve with cooked rice and top with chopped fresh cilantro.
THC-Enhanced Olive Oil Salmon
Ingredients:
2 salmon fillets
2-3 tablespoons THC-infused olive oil
1 lemon, sliced
Fresh dill or parsley, chopped
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
Arrange the salmon fillets on a parchment paper-lined baking pan.
Drizzle THC-infused olive oil over the salmon.
Add some salt and pepper for seasoning, then top with slices of lemon.
In a preheated oven, bake for 15 to 20 minutes, or until a fork can easily pierce the salmon.
Garnish with chopped dill or parsley before serving.
Serve the THC-enhanced olive oil salmon with your choice of sides.
DESSERTS
Special THC Brownies
Who doesn’t love a brownie? This just happens to be my recipe. I hope you enjoy it. Makes 16.
Ingredients:
½ cup melted (see notes) cannabutter
1 tablespoon olive oil or coconut oil
1-1/8 cup sugar
2 large eggs
2 teaspoons vanilla
½ cup all-purpose flour
½ cup 100% cacao powder
¼ teaspoon salt (optional)
Instructions:
Preheat the oven to 350 degrees. Grease or use a non-stick pan (I have used an 8×8, 9×9 and 11×7, depending on whether I double the recipe).
Melt butter over low heat and remove it as soon as it is melted.
Combine butter, olive or coconut oil, and sugar. Whisk for 1-2 minutes.
Add eggs and vanilla (lately I have been using pure vanilla from Mexico—yum); whisk for another minute.
Gently add flour, cacao powder, and salt (if using) until just mixed.
Pour in pan. Use a spatula to spread it evenly and into the corners.
Bake for 20 minutes. Insert a toothpick near the centre to check for doneness
Remove and let cool for ten minutes on a rack. Before cutting, place in the freezer for fifteen minutes.

THC-Infused Pastries
Ingredients:
Puff pastry sheets (store-bought or homemade)
1/4 cup THC-infused butter, melted
Your choice of fillings (e.g., chocolate chips, fruit preserves, nuts)
Powdered sugar for dusting (optional)
Instructions:
Preheat the oven according to the instructions on the puff pastry package.
Now roll the puff pastry sheets on a floured board.
Brush the melted THC-infused butter over the surface of the pastry.
Add your desired fillings, leaving a border around the edges.
Fold the pastry over the fillings and press the edges to seal.
Crimp the edges with a fork to make a pretty design.
Transfer the pastries to a parchment paper-lined baking sheet.
Bake according to the puff pastry package instructions until golden and puffed.
Let the pastries cool slightly before serving.
Just before serving, dust with powdered sugar (optional).
CONFECTIONS
Cannabis-infused Ice Cream
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
Pinch of salt
Cannabis tincture (adjust dosage according to preference)
Instructions:
In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.
Add the desired amount of cannabis tincture, adjusting the dosage to your preference. Mix well.
Transfer the blend into an ice cream machine and process it according to the guidelines provided by the manufacturer.
Once churned, transfer the ice cream to an airtight container and freeze it for a few hours to firm up.
Enjoy the cannabis-infused ice cream in bowls or cones!
